me oh my pie {week 11}

This week’s pie is an acquired taste.  If I make it again, I’d plan to do some adjusting of the chocolate to molasses ratio…I can see how the two could complement each other, but at just the right balance. The current ratio was a bit bitter for my liking. I’d maybe try to add less molasses and maybe more butter.  Part of the fun of this little pie challenge is trying and learning new things…pie practice.

Oatmeal Molasses Pie {Week 11}

1 pie pastry (partial blind baked)
1 c molasses
3 eggs slightly beaten
4 oz dark chocolate (+more for taste)
1 c coconut
2 tbs butter, melted
1tsp vanilla
1/4 tsp salt
1 c old fashioned oats

In a large bowl, whisk together the ingredients, oats last. Pour filling into partial baked crust. Bake at 350 for 25 mins or so, until the filling is just set, and still slightly wobbly in the center. Serve slightly warm with ice cream. Enjoy!
