me oh my pie {week 8}

This week’s old fashion little pie was grand champion at the county fair and made it all the way to the state fair!  But the reason I love this sweet pie is because it happens to be one of my Pappaw’s favorites.

My Pappaw is one of the best men I know. Strong and full of Truth. His walk with God has shaped everyone in the wake of his life, and it’s such a special privilege to get to be part of his spiritual legacy. There will be many mentions of him here on this little blog. Yet for now, I’ll just share, he is the kind of man that can fix almost anything…taught me how to bait a fish hook and build a fire. All man, and he will have a tear in his eye as he is telling you about a piece of scripture that has made its way anew to his heart.

Serving him a slice of this pie and seeing the way he quietly goes for seconds, what a joy.

This pie will always be his and so will I.

Pappaw’s Raisin Pie {Week 8}

1 c. sugar
2 1/2 tbs flour
1 1/2 c. cold water
1/2 tsp salt
1/2 tsp cinnamon
1 tbs butter
1 1/2- 2 c. raisins
1 double pie crust pastry (9″)

In a sauce pan bring filling ingredients to a slow boil on medium heat. Stir continuously and cook an additional 1 min until thickened.  Remove from heat and stir in butter. Pour into prepared pie shell and top with remaining pastry. Bake at 375 for 45 minutes or until the crust is golden. Enjoy!
