me oh my pie {week 1}

It’s fitting to start with this simple coconut pie, because it contains everything good about pie: flaky pastry and creamy, coconut, buttery goodness. Make this pie. I promise, it will soon be a family favorite.

{Week 1} Coconut Pie
3 eggs
1 1/2 c. sugar
1 c. coconut
1/2 c. butter, melted
1 tbs. white vinegar
1 tsp. vanilla
1 pinch of sea salt
1 unbaked pie pastry

Mix filling ingredients well and pour into pie shell. Bake at 350* for 1 hour.
