My favorite way to enjoy a serving of fruit, with pie pastry of course. Make this sugar plum pie when the plums arrive at your grocery and enjoy their sweetness. It’s good for you.
{Week 36} Sugar Plum Pie
1 double pie pastry
5 c sliced plums
2 tbs lemon juice
1 tsp vanilla
3/4 c sugar
3 tbsp cornstarch
1/4 tsp salt
2-3 tbs butter
Egg wash and sparkling sugar
Preheat oven to 375.
Toss together plums, lemon juice and vanilla. In a separate bowl stir together sugar, cornstarch, cinnamon and salt. Sprinkle over plum mixture and toss to coat. Turn into pastry lined pie plate and pat with butter. Top with pastry and cut slits for venting steam. Brush with egg wash and sprinkle sugar. Bake 45-50 minutes until crust is golden and filling is bubbly. Allow to cool completely. Enjoy!!!
