This classic cucumber salad is perfect for a light lunch on the hottest of summer days! Feel free to work in other garden veggies and enjoy!
Sweet Vinegar Cucumber Salad
5 cucumbers
1 onion (red or white)
1 c. apple cider vinegar
1/2 c. sugar (or more to taste)
1/2 c. water
1 tsp salt
Cherry tomatoes (to taste)
Feta Cheese (to taste)
Salt & Pepper (to taste)
Peel and slice cucumbers into thin slices. Cut onion in half and cut into very thin slices. Also slice cherry tomatoes. Combine in a large baggie or jar.
In a separate, medium-sized bowl, combine vinegar, sugar, water and salt. Stir until sugar dissolves.
Pour vinegar mixture over cucumbers, onions and tomatoes. Cover and refrigerate at least 20 minutes. Before serving, drain liquid and sprinkle with crumbled feta. Place in a serving bowl to serve. Enjoy!
