You just never know when you are going to need a chocolate chip cookie. In my dream world there would always be a stockpile in the freezer ready to hop in the oven at anyone’s beck and call. Who doesn’t love warm from the oven cookies at a moments notice!? These cookies from my dear friend Kate are perfect for that, although they don’t last too long, try to hide a few away in the freezer for a surprise week night treat sometime! Then you can bake these cookies up anytime you like and enjoy every last little crumble!
Kate’s Chocolate Chip Cookies {Week 9}
1 c butter
1/2 c shortening
1 1/4 c brown sugar
1 c white sugar
2 eggs
1 TBS vanilla
2 tsp baking soda
1 tsp salt
3 1/2 – 4 c flour
3-4 c chocolate chips
Cream butter, shortening and sugars until light and fluffy (2-3 minutes at least). Add eggs and mix; add vanilla; add salt and baking soda. Slowly add flour 1 cup at a time until dough is stiff. Fold in chocolate chips. Bake on parchment paper in 350 degree oven for 10-12 min. Any dough you want to save, just portion out and freeze for later! Enjoy!
