it’s a year of cookies {week 22}

This recipe isn’t a cookie, but honestly, don’t you think if cookies had friends, they would certain keep company with the likes of a rice crispy treat? I sure think so. 

I have two rice crispy treat recipes I’ll share with you, but this first one is our family favorite. As in, when I was a child, this was how I thought all rice crispy treats were made…and in our family, of course the recipe involves peanut butter–because marshmallow and butter just isn’t enough sometimes.

These little treats are perfect to pack along on any summer picnic or a road trip when you just need a good snack. Plus, on our hot summer days, there is no oven required to whip these little treats up!

Favorite Rice Crispy Treats
1/2 stick of butter
4 cups mini marshmallows
1/2 cup of peanut butter
5-6 cups of rice crispy cereal
[Make these enough and you won’t have to measure, but add more of this or that to suit your family’s taste!]

In a large sauce pan melt butter over low heat. Add marshmallows and stir until incorporated and completely melted. Remove from heat and stir in peanut butter until combined. Then add cereal (I usually have a larger bowl I use to mix everything together for more room).
I don’t like my rice crispy treats too dry, so I only add enough cereal to bring it all together and to coat the cereal nicely. Once you have the desired consistency you like, place into a 9×13 buttered or parchment lined pan and spread out and pack down the mixture until even. Allow to cool before cutting. Enjoy!
