me oh my pie {week 19}

In our neck of the woods, early May is Derby time.

Derby time calls for Derby pie.

I think this pie is the first pie I remember making on my own, in my own tiny kitchen, in college. It’s the first pie I think of taking to any shindig. And it’s a great pie for a beginner because all the buttery, chocolatey, goodness won’t fail you. It’s the kinda pie you throw together in a jiff and let the oven make something wonderful. This crowd-pleaser of a pie will be one of your go-to recipes soon too…

Derby Pie {Week 19}

1 pastry shell
1/2 c butter, melted
1 c sugar
2 eggs
1 tsp vanilla
1/2 tsp salt
1/2 c flour
1 c pecans, chopped
1 c chocolate chips

Mix butter, sugar, add eggs, vanilla and mix well. Add salt, flour and mix well again. Fold in pecans and chocolate chips & pie into prepared pie crust.

Bake at 325 for 1 hr. Watch to not over or under bake, pie should be gooey but not runny.
Allow to cool for 1-2 hrs before serving.
