snow day sausage quiche

Snow days call for simple… and this crustless quiche is just that.

It’s substantial and hardy and won’t have you slaving away in the kitchen, so the time you save making this pie can be spent with whatever romantic notions you may have for your own snow days…you know, things like…taking a snowy walk …or sitting by the fire sipping some cocoa…or maybe simply doing the laundry.

Simple Sausage Quiche
1 (16 oz) package of pork sausage, cooked, crumbled, drained
4 green onions sliced
1 c. shredded cheddar cheese
4 eggs
2 c. half and half or milk
1 c. all-purpose baking mix
Optional toppings: sour cream, chopped green onions, tomatoes, or fresh parsley)

Preheat the oven to 400 degrees. Place sausage in lightly greased 2-quart round casserole or deep dish pie plate. Top with onions and cheese.

Beat the eggs, half-and-half and baking mix together with a wire whisk until well blended. Pour over cheese mixture.

Bake for 40-45 minutes, or until a knife inserted in the center comes out clean. (Do also watch for browning and tent with foil half way through baking if getting to brown on top).

Cool 5 minutes and then serve!
