anatomy of a quiche

Quiche: not just for bridal showers and foodie parties. Quiche can be supper and a good fast supper too. Plus who doesn’t love pie that you can eat for breakfast, lunch, or supper?! Take a quick look in your fridge, bet you’ve got everything you need to make a delicious quiche tonight! Just use a little of this and a little of that, some leftovers here and you’ll have a delicious supper done in no time! Here’s how…

Anything-Goes Supper Quiche
Single Crust Pie Pastry (or this recipe)
6 or so eggs
1-2 cups Cooked Protein (ham, bacon, sausage, chicken)
1-2 cups Fresh Greens (arugula, spinach, mixed spring greens)
1/2 cup Cream (sour cream, milk, yogurt, half and half)
1-2 cups Cheese (swiss, gruyere, cheddar, colby jack, mozzarella, feta)
Other mix-ins: onions, olives, chopped sweet peppers, mushrooms, other veggies, favorite herbs)
generous pinch of salt and pepper
1 tsp dried mustard

Pick and choose whatever you have on hand and sounds good to you and your family. Mix eggs and cream until smooth. Fold in all your other ingredients (protein, cheese, greens, mix-ins). Pour into prepared pie shell. Bake at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. (May have to tent with foil if  the crust begins to over brown). Let stand for 15 minutes before serving.

While you are at it, if you are making one, might as well make two and put one in the freezer for later! Yay, two dinners for the work of one! Just assemble everything and freeze for another day! (Bake as normal just allow for more time-10-20 minutes more)
